Lucy Loves...Linguini Gamberoni




Howdy peeps!

I've been meaning to do a recipe post for ages, as my boyfriend is an ex chef and cooks up a storm in the kitchen. Some times when I'm lucky he lets me help ;) I am so lucky to have a man that cooks for me, and its never a frozen meal you wack in the oven. No sir, this food is to die for! We are very lucky as we have the exact same taste when it comes to food, i.e. we will eat ANYTHING. But some of our favourite dishes include fish and pasta.

So we decided to combine the two. Guy whipped up some Linguini Gamberoni which includes big fat king prawns and chorizo. This dish is so light but satisfying at the same time. I think it would go down a treat on a warm summer's evening with a cold glass of white wine : )



Serves 2 greedy people (like us)

Ingredients:

Linguini - 1 pack (decceco brand)
Olive oil - 3 tbsp.
Chorizo - 100g
King prawns - 200g
Dried red chilli flakes - 1 tsp
Garlic cloves - 3
Shallots - 2 small or 1 large
Red onion - half
White wine - 1 glass
Tomato puree - 1 tbsp.
Fresh parsley - handful
Salt and pepper to taste

Optional - 1 tbsp peach jam infused with naga chilli. This adds sweetness and spice if you like it hot but isn't essential.


Preparation:

  • Chop the garlic and shallots as finely as possible. Cut the chorizo in half length ways then chop up the chorizo so it looks like little half moons. Thinly slice the red onion. Finely chop the parsely once don't run through again.

Cooking:


  • Bring a large pot of water to the boil. Add a handfull of salt and place the pasta in.
  • While the pasta is cooking, heat the oil in a pan until hot.
  • Add the chorizo until it starts to turn golden and releases it's paprika rich fats.
  • Add the chilli flakes and cook for 30 seconds then add the garlic and shallots.
  • Cook for two minutes adding the wine and tomato puree just before the garlic starts to colour.
  • Reduce by two thirds (this should only take a couple of minutes)
  • Now add the peach jam and a ladel of the pasta cooking water.
  • Then chuck in the prawns and red onions cook for 30 seconds.
  • Add salt and pepper to taste.
  • Now remove the pasta and drain.
  • Combine with sauce adding the parsley and serve immediately as sitting for too long will over-cook the prawns.


Although I mentioned at the start of this post that the pasta would be ideal with an ice cold glass of wine, but we had ours with a fruity little cocktail. So any drink of your choice will go perfectly!

Motivational Monday #3

March Favourites!

Ugh, cannot believe it's nearly the end of March already! Jeezo! 

Favourite Beauty Product
One word to describe this product? AMAZING! Honestly, this is a product I can safely say does what it says on the tin. A combination of the wand and the formula really lengthen and thicken my lashes. I usually use at least two different types of mascara on my lashes as I feel that it helps achieve optimum results. But with this product, I feel that I don't need to use any other products on my lashes to thicken and lengthen as it does both without clumping. 






Favourite Hair Product
This has probably been a favourite of mine for a couple of years now. I tend to use it whenever I feel my hair is starting to get a brassy tinge to it. It is a deep purple colour and has a thick consistency to it. I always see results after I use it so you need to be really careful you don't leave it on for too long as it will make your hair a pale purple shade, but if you like that go for it! I was rocking the grey/purple look last summer and I loved it!
I get this product online for about £7 depending on what site I use.





Favourite Smell
Guy got me this perfume last year for my birthday and since then I had only worn it on special occasions. But recently I have been wearing it alot more. I am so in love with the smell. Its so fresh but a little spicy and makes the perfect spring time scent.




Favourite Food
Homemade burger, chips and pakora
Guy whipped this up on a Sunday night and it was ah-mazing! I have to admit that the pakora was the best ive ever had. I don't feel as guilty when I eat fatty foods like this which are homemade as I know exactly what's went in to it!         



Favourite Song 
Paramore - Last Hope
I'm not gonna lie, Paramore's new album is general is frickin' awesome, but their song last hope is one of the best. I love Hayley's voice,  she's so talented.

Favourite Film
Pocahontas 
Eeee! I just downloaded this the other day and I forgot how good it was! You know that way something will remind you of something for your childhood? Well I don't know why or how I thought of Pocahontas, but as soon as the film popped into my head I knew I had to download it! It was great having a sing along too ;)

This is kinda the same idea as what happened with Pocahontas. I just remembered how much I loved the show and knew I needed to start watching it from the beginning again!

Favourite human
This was the girl that got me absolutely obsessed with YouTube beauty videos! Thanks to Elle, I am addicted to the whole YouTube beauty guru scene. I love watching her videos on beauty, fashion and decor and she is so sweet! I commented on one of her videos the other week and she actually replied to me! Its nice how she tries hard to communicate with all her subscribers and listens to their video requests.

Motivational Monday!

Hi Y'all!

Instead of filling today's Motivational Monday with a bunch of pics and not so many words, I decided to do the opposite. I was scrolling through Google Images to find fab inspirational and motivational pictures to put in today's blog post when I came across this picture...


Now dont get me wrong, I've seen this picture circulating Facebook etc before, but today it really stood out to me. I had a couple of holidays that I needed to use up from work so took Friday and today off as a long weekend and believe me, I had a 'To Do List' as long as my arm! And you know what? I have done nada off that damned list! I had so many things I wanted to get done and now I find myself on the last of my days off watching back to back episodes of The OC. 

Right, enough moaning and back to the picture! Beyonce is one hell of a woman, like seriously AH-MAZING! Not only is she beatuiful and unbelievably talented, but she is a mother, a wife, fashionista, a huge successful singer/actress and an inspiration to millions! So my point? If Beyonce can, well, be Beyonce, I can bloody well gut the cupboard in the living room, hang up that canvas that has been sititng in my hall for months and write enough blog posts to keep me going for the next couple of weeks. Enough of making 'To Do Lists' and start actually doing!

Apologies for this week's Motivational Monday turning into a sort of rant, but it did kind of annoy me seeing this picture and realising how much time I've been wasting! Don't get me wrong, I've had a lovely weekend with friends and my boyfriend but these things that need to get done can still be done whilst having a social life! Like the picture says, I have the same amount of hours in a day as Beyonce, and you do too : )

January/February Favourties




Hello dears : )

I wanted to start doing monthly favourites blog posts and thought I would be awkward and start nearly half way through March! I love reading monthly favourites posts and having a right wee nosey at what other bloggers have been loving.
From this post on, I will aim to (hopefully) get a Monthly Favourites blog post out at the end of every month and if I don’t you have my full permission to give me a good telling off!
 So here we go…

 Beauty Favourites
Rimmel Stay Matte Foundation



I think this foundation is the best foundation I have ever used. I have combination oily skin so find that foundations tend to cake in my t-zone after several hours of wear. As this foundation is a mousse I find that it blends really well and has amazing shine-control which leaves my skin with a lovely matte finish. It has excellent coverage too! I apply the foundation with my MAC stippling brush and find that it is also excellent at minimising the appearance of pores.
MUA Extreme Felt Liner




This may be no surprise, but I HATE applying any form of liquid eyeliner. I never seem to get both eyes even and proper liquid liner usually make my eyes water as soon as I am outside batteling the UK elements. But this little beauty by MUA has been my saviour. Not only is it super easy to apply, but it lasts all day and is like really really black! I love it! It doesn’t make my eyes water either no matter how windy or sunny it is which is perfect. At £2.00 as well its an absolute steal!
 
Hair Favourites
Lee Stafford Poker Straight Flat Iron Protection Shine Mist




As mentioned in my favourite hair care post, this product has been my favourite since I was in school and it has remained my favourite up until now. With the central heating being on all the time during the colder months, this product really helps control my hair and stops it from going frizzy after straightening or fluffy.
 
Food Favourites
Kirkland Dried Blueberries




Guy and I tend to go to Costco once a month to stock up on the basics. When we were last year I saw this product and thought they looked awesome and I was right! They are honestly soooo good! They’ve also lasted for ages!

TV/Film Favourites
The Wolf of Wall Street


Guy and I saw ‘The Wolf of Wall Street’ when it came out. I had been dying to see it ever since I first heard about it. I think I saw a teaser trailer for it at some point waaaaay back in 2013. I mean anything with our pal Leo in it is a must see in my book! I fell in love with him all over again in ‘The Great Gatsby’ so knew he would again be perfect eye candy in his latest film. The film was so edgy and funny, I honestly was in stitches at certain points throughout the film. Leo is a great actor, I’m actually devastated that he didn’t win an Oscar (isn’t everyone) as I really think he deserved it. I’m actually so surprised he never won an Oscar for Titanic, I mean, what the hell?!
American Horror Story


 Ahhhhh, ohmygoodness! I was absolutely obsessed with this TV show through the months of December, January and February. We just finished watching the last of Season 3 the other week. All I can say about this, is that you HAVE to watch it! It’s an American show which we watched online. The 3 seasons consist of 3 different story lines and have nothing to do with one another. Each seasons have a combination of the same actors though. The first season was about a murder house set in the present. The second season was about an insane asylum set in the 60s and the third season is half set in…I can’t actually remember, but it was a loooong ass time ago, and the present and it was about a witch’s coven. The show is completely original, witty and a tad scary. Definitely a must see! I cannot wait until the next season is out!


Music Favourites
Of Monsters and Men – Silhouettes. 
I heard this song during the ending credits of The Hunger Games ‘Catching Fire’ (which I should have mentioned in my Film Favourites cause it was amazing!!) and fell in love, I immediately downloaded it off iTunes and have been listening to it constantly ever since. 
Calvin Harris – Under Control.
One word…amazing.

Human Favourites
My Guy.


 He is usually always my favourite human in the whole entire world. Well, when he isn’t driving me insane…
