Lucy Loves...Linguini Gamberoni




Howdy peeps!

I've been meaning to do a recipe post for ages, as my boyfriend is an ex chef and cooks up a storm in the kitchen. Some times when I'm lucky he lets me help ;) I am so lucky to have a man that cooks for me, and its never a frozen meal you wack in the oven. No sir, this food is to die for! We are very lucky as we have the exact same taste when it comes to food, i.e. we will eat ANYTHING. But some of our favourite dishes include fish and pasta.

So we decided to combine the two. Guy whipped up some Linguini Gamberoni which includes big fat king prawns and chorizo. This dish is so light but satisfying at the same time. I think it would go down a treat on a warm summer's evening with a cold glass of white wine : )



Serves 2 greedy people (like us)

Ingredients:

Linguini - 1 pack (decceco brand)
Olive oil - 3 tbsp.
Chorizo - 100g
King prawns - 200g
Dried red chilli flakes - 1 tsp
Garlic cloves - 3
Shallots - 2 small or 1 large
Red onion - half
White wine - 1 glass
Tomato puree - 1 tbsp.
Fresh parsley - handful
Salt and pepper to taste

Optional - 1 tbsp peach jam infused with naga chilli. This adds sweetness and spice if you like it hot but isn't essential.


Preparation:

  • Chop the garlic and shallots as finely as possible. Cut the chorizo in half length ways then chop up the chorizo so it looks like little half moons. Thinly slice the red onion. Finely chop the parsely once don't run through again.

Cooking:


  • Bring a large pot of water to the boil. Add a handfull of salt and place the pasta in.
  • While the pasta is cooking, heat the oil in a pan until hot.
  • Add the chorizo until it starts to turn golden and releases it's paprika rich fats.
  • Add the chilli flakes and cook for 30 seconds then add the garlic and shallots.
  • Cook for two minutes adding the wine and tomato puree just before the garlic starts to colour.
  • Reduce by two thirds (this should only take a couple of minutes)
  • Now add the peach jam and a ladel of the pasta cooking water.
  • Then chuck in the prawns and red onions cook for 30 seconds.
  • Add salt and pepper to taste.
  • Now remove the pasta and drain.
  • Combine with sauce adding the parsley and serve immediately as sitting for too long will over-cook the prawns.


Although I mentioned at the start of this post that the pasta would be ideal with an ice cold glass of wine, but we had ours with a fruity little cocktail. So any drink of your choice will go perfectly!

Busy Bee...

Good morning my loves!
As I said last week, I have been such a little busy bee and have not been able to work on my beloved blog! To assure you that I’m not telling porky pies, below are some pics of the past week and a half…
 
I've been trying to wind down before I go to sleep and a candle does just the trick, along with my Bath and Body Works Pillow spray in lavender and vanilla : )
 
 
I saw this on Facebook and thought it was bloomin hilarious! Its what a cat looks like from underneath a glass coffee table!
 
 
I have been experimenting with a lot of make-up looks recently (tutorials to follow) and been loving using the MUA matte palette.
 
 
I used Chanel in 'misty soft' on my eyes here 8-)
 
 
I bought these beautiful flowers out of Morrisons for a couple of quid! They remind me of the flowers in the garden in the film 'Coraline' (one of my faves)!
 
 
I have been eating and drinking so much crap, but its soooooo good! We got a Chinese last week - I got duck pancakes, mini spring rolls and salt & chilli chips. Guy made Blackberry Fizz cocktails to go along with our dinner : ) If you would like the recipe for Blackberry Fizz, let me know in the comments below...
 
 
I have been spending so much on ebay recently...my bad! I got this Abercrombie & Fitch cardy for £12!
 
 
When Guy go his wages, he made us steak for dinner, yum! We had it with a large mushroom cooked in garlic butter, chips and whiskey sauce. We bought a deep fat fryer so we could have chips the naughty way ;)
 
 
When I downloaded ios7 I had to delete all my apps including Snapchat! Once I remembered to re-download it, I had a lot of fun sending my pals crazy snaps!
 
 
I have been absolutely loving the weather. I'm one of those people who love the rain and colder weather. Don't get me wrong, I'm crazy about Summer, but if I had to be a season (sounds weird) I would deffinitley be Autumn : )
 
 
Although we've been having take-aways constantly, I always try and eat healthy in work. This is a pic of my usual daily salad.

Oft, now this was AMAZING! We got this Indian tapas mixture from our regular Indian restaurant because we had never tried it and it was honestly the best take-away I have ever had! Absolutely amazing!
 
 
Lilly is being as crazy as ever, she just loves climbing up my legs...especially when I've only got my jammie shorts on! :(

Me & my other half attended an engagement party on Saturday. It was loads of fun and was a nice way to relax a bit before my big exam!

A typical day...

Hi folks! 

I thought it would be a good idea to show you guys a typical day of my meal plan in action! Although some of the things I've had weren't mentioned in the meal plan in a previous post, they will be mentioned in meal plans in upcoming posts. So here goes....

 
For breakfast I had a small bowl of Greek yogurt with blueberries. I love this for breakfast as its quite light but keeps me going through till lunch! 


My 'mid morning snack' was a cup of peppermint tea along with a handful of almonds (not shown). Peppermint tea is a great preventative force against catching bugs like the common cold or even the flu! It contains lots of potassium, calcium and vitamin B. I will usually have a mug of coffee in the morning but some mornings  I prefer a nice herbal tea to help flush out any toxins. 


For lunch I had chicken, spinach & houmous wraps with a side of tomato and cucumber salad. This type of lunch usually keeps me full for the period of time before dinner. 


I don't know about you guys, but I like to work out before bedtime. I have a shower at night before I go to sleep because I am always too tired to have one in the morning. I also feel like it relaxes me before I nod off. Anyways, I cheated a bit with this dinner as I was planning on having quite a vigorous workout later on. I had to burgers (no bun) along with a large salad, a hard boiled egg & curly fries - woops! But it was soooo good! 

I usually try to have pieces of fruit or a yoghurt during the afternoon, but I was extremely busy at work that day! 

I like these kind of posts as I am such a foodie and love taking pics of my food (exciting life) ha ha! My instagram is full of pictures similar to these, follow me & ill follow back ;)

My Fitness Pal

Good morning lovelies! 


Sooo, this is just a quick post to tell you guys about this amazing app I downloaded to my iphone! It's called 'my fitness pal' and it helps keep track of your calorie intake. I wish I had discovered it sooner! Anyways, I don't feel like I need to shed the pounds or anything like that, but my boyfriend and I have been eating really unhealthy lately, I.e. takeaways almost 3 times a week! So this app is really just a method to enable me to keep track of my calories to make sure I am eating the right foods. 


You guys HAVE to download it! 


The other night Guy (my boyfriend)) made some really yummy salmon & scallops! It was delish and only 433 calories! Yum! 😋




I failed a bit last night as we had lasagne which was 500 calories a portion...woops! But it was soooo good! 

If you guys have any healthy dinner ideas, please let me know!
